Commoners would dance for joy when they found Maitake, knowing they would be greatly compensated for their discovery.

Maitake/Hen of the Woods

Cooking & Serving

Lightly brush Maitake clusters with oil and season with salt and pepper. Heat a cast iron pan over medium heat until very hot, about 2 minutes. Add 1 tablespoon of oil to coat the pan. Add clusters and use a second heavy pan to weigh down and press/sear them. Cook for 3 minutes, then remove the weight and the mushrooms. Add another tablespoon of oil to the pan, when hot return the mushrooms to the pan, raw side down, and add weight to press it down, sear for 3 minutes. Repeat until the mushrooms are condensed into crispy brown steaks with almost no liquid left in the pan. Brush with favorite BBQ, steak or other sauce and serve.
